Chocolate Nut Fudge Balls - Simple & Healthy

You know when you get a serious craving for something sweet, chocolatey and just a bit indulgent but don't actually want to indulge in something unhealthy? These are what you need in your life.
They're sooo easy to make, don't require any cooking and it's very likely you have a few of the ingredients in your cupboards already. Plus they take like 20 mins to make, so that's a bonus.

I made them the other night and got the flatmates to test 'em, they all agreed they taste exactly like a fudge brownie. There's loads of variations to the ingredients, so don't be put off if you don't like coconut...pop some chocolate protein powder in there for extra staying power too.
What you'll need:
- 200g of cashews blended until smooth
- 3 tablespoons of honey (use raw if poss, I didn't, oops)
- 1 teaspoon of vanilla extract
- 20 pitted dates
- 2-3 tablespoons of cocoa powder
- 1 cup of desiccated coconut for covering (optional)... you could substitute cocoa powder here if you wanted
- 1 tablespoon of peanut butter (optional)
- 2 tablespoons of milk (optional)
What you'll do:
- Blend the dates until a sticky, lumpy mess
- Make sure the cashews are blended and powder like (image below).
- Mix all of the ingredients (apart from the coconut/extra cocoa) in a bowl and combine well (may need to use your hands).
- Place on a non stick surface (baking paper is best) and make into small balls.
- Cover with coconut/cocoa powder/nothing and place in fridge for 30 minutes* 
- You may want to try one before they go in the fridge, just out of pure greed.
- You may also want to pop them in the freezer to quicken the process up, because well, greed again.

*You don't need to cool them down, I just prefer them a little tougher.
These are definitely my new favourite revision/library trip/I have no excuse but I am hungry snack. 

The only problem is they are very moreish. Enjoy!
