Simple Orange Drizzle Cake

While watching Masterchef with the other half and salivating over the amazing food, I realised it was about time I shared this recipe with you guys. Not for any other reason than I think everyone should try it at least once in their life. It is simple, delicious and completely comforting. It's a cake you eat in the winter when you've had a bad day. Or in summer. Or spring. Or autumn...you get it.
Prep time: 15 minutes
Cooking time: 30 - 40 minutes
For the cake:
- 225g butter
- 200g caster sugar
- 275g self raising flour
- 2 teaspoons of baking powder
- 4 free range eggs
- 4 tablespoons of milk
- Grated rind of half an orange…feel free to add more
- Cake tin…I used two of about 9inches.

For the butter icing:
125g of butter
Icing sugar…I don't weigh this, just keep adding it until the consistency is fluffy
Squeeze of orange juice (optional)

For the icing juice:
Half the juice of an orange
20g of dark brown sugar
What you'll do:
1. Grease the cake tins and preheat the oven to 180 degrees C.

2. Measure all ingredients out and combine in a large bowl. If you have an electric mixer, you should use that, you lucky thing. I had a wooden spoon, it worked just fine though.

3. Pour the mixture evenly across the two cake tins. Bake in the middle of a preheated oven for 30-40 minutes. When a knife comes out clean, it is ready.

4. While the cake is in the oven, make the two types of icing.

5. Firstly, mix the juice of half an orange with 20g of brown sugar together in a bowl.

6. Secondly, combine the butter and icing sugar together. Feel free to add some orange juice at this stage, depending on the consistency.

7. When the cakes are cooked: allow the bottom half of the cake to cool slightly, press a knife through it in a few areas, pour the orange juice/brown sugar icing over the top of it.

8. Allow the entire cake to cool completely before decorating with the butter icing.

9. As a last step I squeezed a bit of orange juice over the top of the butter icing. Images below show the entire process.
