Healthy And Simple Broccoli Cheese Bites

You know when you find a recipe on Pinterest and think how wonderfully simple, yet delicious it looks, so decide to make it that same week, but end up letting it slip into your recipe board of oblivion and forgetting all about it's existence? That's this broccoli recipe right here. 


I saw this idea about two years ago and for some ungodly reason, have only just gotten around to making it. I made a few adjustments, since I was only working from images and no actual recipe, but I think it worked out really well. The whole flat ate and enjoyed them, so that's a good sign!

What you'll need (this will make enough for 8-12 bites):
  • 1 large broccoli*
  • 3 eggs
  • Enough breadcrumbs to make the mixture sticky, not wet. 
  • Cheese... I used cheddar. I would probably add feta next time too.
  • Seasoning...I used salt and pepper. Cayenne pepper would be yummy too and garlic!

What you'll do:
  • Preheat oven to 200 degrees C.
  • Cut the broccoli into small bits. Partially steam it, then leave to dry a little.
  • Mix the eggs in a large bowl, add the cheese, breadcrumbs and chosen seasoning.
  • Add the broccoli to the mixture and make sure its all combined, otherwise it'll taste like a large omelette in parts (perhaps yummy, but besides the point).
  • Separate mixture into small sections and place on chosen baking base (I used a casserole dish covered with foil).
  • Place in oven to bake for 7-10 minutes. I flipped them halfway through to get a nice even bake.
  • If they're still not golden brown, pop the grill on and finish them that way. They should look like my images below if you want it to be a little crispy. Ovens are all different after all, so it may take a little longer.
